
Simple Tomato Soup
Ingredients
- Tomatoes (750g)
- 1 large white/brown onion
- Cream
- Head of Garlic
- Onion
- Oil
- (Optional) permesan cheese
Seasoning
- Basil
- Thyme
- Salt (or a vegetable/chicken stock cube)
- (Optional) paprika

Steps
- Preheat oven to 200C
- Peel & chop your onion into quarters
- Chop off the tip of the garlic bulb and wrap in foil
- Pour oil into the garlic. Close the foil
- Place onions and tomatoes in a baking tray and oil them up, then and the foiled wrapped garlic
- Roast for 40 mins until your veggies have some char (your garlic may need more time)
- Add your roasted vegetables to a pot and squeeze the garlic out in (garlic needs more cooking time if it won’t squeeze)
- Add in your seasoning then blend together.
- Simmer the sauce on a low heat for 30 minutes
- This is where you would add permesan cheese and stir till it’s melted
- Add the cream and turn the heat off
- Leave the soup to let the flacours combine
Now you have a rich smooth tomato soup. This is perfect with toast or a crilled cheese. It can also be used as a dipping sauce for roast potatoes… Get creative
