Simple Tomato Soup

Ingredients

  • Tomatoes (750g)
  • 1 large white/brown onion
  • Cream
  • Head of Garlic
  • Onion
  • Oil
  • (Optional) permesan cheese

Seasoning

  • Basil
  • Thyme
  • Salt (or a vegetable/chicken stock cube)
  • (Optional) paprika

  • Blender

Steps

  • Preheat oven to 200C
  • Peel & chop your onion into quarters
  • Chop off the tip of the garlic bulb and wrap in foil 
  • Pour oil into the garlic. Close the foil 
  • Place onions and tomatoes in a baking tray and oil them up, then and the foiled wrapped garlic
  • Roast for 40 mins until your veggies have some char (your garlic may need more time)
  • Add your roasted vegetables to a pot and squeeze the garlic out in (garlic needs more cooking time if it won’t squeeze)
  • Add in your seasoning then blend together.
  • Simmer the sauce on a low heat for 30 minutes
  • This is where you would add permesan cheese and stir till it’s melted
  • Add the cream and turn the heat off
  • Leave the soup to let the flacours combine

Now you have a rich smooth tomato soup. This is perfect with toast or a crilled cheese. It can also be used as a dipping sauce for roast potatoes… Get creative
